Improve Website Design With An Impressive Layout - Web Unlimited

Houston Web DesignThe purpose of any website is to communicate with viewers through articles, video streaming, images, and an impressive layout. All of this is done to achieve a strategic advantage and favorable outcome over any internet competition. A good Houston web design company can create a design so that a company can be successful in competing against online rivals. A successful website must possess certain basic elements, all of which have the capacity to entice spiders for proper indexing to help attract relevant traffic and eventually converting it into a sale. Following are some tips to help create an impressive layout that is appealing to potential customers.

  • Menu Placement ? The placement of a menu should be done strategically for excellent presentation, typically at the top of every web page so visitors can immediately see all essential elements. Viewers tend to access a site?s information from the navigation menu positioned on the home page, with sub-level menus in a sliding panel that can be accessed by hovering the mouse. The menu should link to other pages and provide relevant information.

  • Simplicity ? A common mistake in web design is being excessive with the layout. It is very tempting to want to include too much; however, the elements of any design should be kept simple. Too much information can confuse a visitor, and slow a page down, making it difficult to navigate and decreasing loading speed. Make the layout a professional Houston web design, with just the right amount of seasoning for the best result.

  • Typography ? The proper typography is one of the foundations of a great layout and plays a vital role in its success. Therefore, it is imperative to choose the right typeface that is readable in order to express the content of the page. Avoid using a font size below 12 points and use different fonts sparingly to create hierarchy and tone without exaggeration.

  • Organization ? Proper arrangement of information is one of the most vital decisions that can be made in the design of a website; how it is presented can have a substantial effect on a visitor?s experience with the website. Most viewers really have little knowledge about a website on a first visit, so all information must be systematically arranged so that its purpose can be quickly perceived.

An impressive layout is something that can linger in the minds of potential customers long after leaving a website. A Houston web design should have a layout with essential elements that will win the hearts of viewers making important buying decisions. Failure to portray the true meaning of a business through its online presence can be a fruitless effort. If the layout tips referenced above are followed, a website can become a remarkable one appealing to visitors and web spiders alike!

Satellite launch stirs passions in Venezuela

Venezuela will launch its second satellite on Friday in a move President Hugo Chavez says highlights the achievements of his self-styled revolution ahead of an election, but which his rival says underscores his neglect of problems closer to home.

It is a close race with just nine days to go before the vote in South America's biggest oil exporter. Both sides are planning huge rallies next week to close their campaigns, as well as making last-ditch efforts to win over undecided voters.

Opposition candidate Henrique Capriles says Chavez is focused on spreading his socialist project around the world - and has done little to address the daily problems of Venezuelans such as crime.

The "Miranda Satellite," which will be launched from China, is a prime example of what he calls Chavez's grandiose plans. For the government, it is a symbol of sovereign pride.

"It is a reaffirmation of our path towards independence, in all areas of knowledge," Science Minister Jorge Arreaza said on Twitter. "The rancid bourgeois (opposition) dismiss it and humiliate the workers ... who designed and built it. How sad!"

Like the "Simon Bolivar Satellite" launched from China in 2008, officials say the new spacecraft will help the government monitor the environment, improve urban planning and even crack down on illegal mining and drug cultivation.

Both satellites were named after 19th-century independence heroes. Live footage of Friday's late-night launch is due to be beamed from China to big screens in Caracas' museum district, where officials were gearing up for a street party.

In the run-up to previous elections, Chavez has often unveiled many projects in an effort to impress voters. This time, his campaigning has been much less intense, partly because he has suffered two bouts of cancer since June 2011.

'Chavez is tired'
Chavez, 58, is warning his "bourgeois" foe will scrap his social welfare programs, while Capriles wants to tap discontent over crime, unemployment and inefficient public services.

In a jab at the baseball-loving president, the opposition candidate held a rally on Thursday at the home stadium of Chavez's favorite team, Los Navegantes del Magallanes.

"The president is like a pitcher whose arm is tired. ...? We need a new one," Capriles told the cheering crowd in Carabobo state.

The latest surveys by Venezuelan pollsters have been sharply divergent. Most of the best-known polls show Chavez ahead, but Capriles' numbers have been creeping up. Polls are notoriously controversial in Venezuela and public opinion shifts quickly.

Investors expect Capriles to end a five-year nationalization drive if he wins, and reduce state intervention in the economy.

Chavez has vowed to strengthen his oil-financed socialism if he gets another six years in office. That is likely to mean fresh confrontation with the private sector, and more support for the president's leftist allies around the region.

Capriles says he believes Chavez is willing to step down if he loses on Oct. 7. But some radical members of the opposition fear the president could do anything to stay in power, from rigging the vote to sending armed supporters into the street.

During previous elections there have been plenty of accusations of small-scale fraud at remote polling stations ? but no evidence of widespread, centralized rigging.

Venezuela's widely traded debt has risen as Capriles' poll numbers have inched up. Its popular Global 2027 bond has climbed by more than 3.5 percent in the last week alone.

Wall Street would like a more business-friendly leader in Venezuela, although Chavez's government has never given any sign of defaulting on the country's debts.

(AP) ? Court files show that the man behind the crudely produced anti-Islamic video that sparked violence in the Middle East changed his name a decade ago, saying his given name was a girl's name.

The 2002 file obtained from Orange County Superior Court on Friday show that 55-year-old Nakoula Basseley Nakoula changed his name to Mark Basseley Youssef.

Nakoula wrote that he wanted to change his name because, he said, Nakoula was a girl's name and caused him trouble.

Nakoula was arrested Thursday for violating probation on a 2010 bank fraud conviction.

Federal officials say he is behind the 14-minute trailer insulting Islam that has inflamed the Middle East.

Nakoula was convicted in the bank fraud case and appeared in court Thursday under his original name.

Doctoral student developing next generation of lithium-ion batteries for longer lasting mobile devices, electric cars

ScienceDaily (Sep. 27, 2012) ? Sometimes even batteries can use a boost of energy, according to the focus of a Kansas State University graduate student's research.

Steven Arnold Klankowski, a doctoral candidate in chemistry, La Crescent, Minn., is working under Jun Li, professor of chemistry, to develop new materials that could be used in future lithium-ion batteries. The materials look to improve the energy storage capacity of batteries so that laptops, cellphones, electric cars and other mobile devices will last longer between charges.

Additionally, lithium-ion batteries that can store energy and deliver power more rapidly will be a more viable alternative power source for vehicles and machines powered by alternative energy, Klankowski said. For example, solar- and wind-powered technologies could switch to the battery in the evening when there is a lack of wind or sunlight to produce energy.

"The battery market is moving very fast these days as everyone is trying to get an advantage for their electric vehicles and cellphones," said Klankowski, who also has a background in materials engineering. "As our devices get smarter, so must our methods to supply greater amounts of portable electrical energy to power these devices."

For his research, Klankowski is developing and testing a high-performance nanostructure of silicon coated onto carbon nanofibers for the use as an electrode in lithium-ion batteries. The electrodes, which look like a dense brush, give the battery greater charge capabilities and storage capacity. This is anticipated to replace current commercial electrodes that are made from simple carbon-based materials.

The material being developed and improved by Klankowski helps the electrode store roughly 10 times the amount of energy as current electrodes -- giving the batteries a 10-15 percent improvement in current battery technology.

"We're trying to go for higher energy capacity," Klankowski said. "To do that we're looking at if we can store more energy per the electrode's size or mass, and if we can use that energy more quickly to make the battery like a capacitor. Batteries and capacitors are on opposite sides of the energy storage field. We'd like to move them both closer together."

In the lab, Klankowski looks at how the characteristics of the lithium-silicon-alloy material differ with each production cycle and how those characteristics can be improved to move lithium-ion batteries closer to capacitors.

The material is also studied for its ability to store energy. Tests, which simulate a battery's operation, repeatedly charge and discharge the material with energy.

According to U.S. Department of Energy's requirements, a battery must remain at 80 percent capacity after 300 charge-discharge cycles.

"A battery today tends to die after 400-500 cycles or three years," Klankowski said. "One of the things we'll want to improve on is that lasting performance. It won't be much of an advantage if your phone's battery can last for 36 hours for the first few months but then only two hours after that. With the progress we are seeing, I hope one day to drive from Manhattan to my folks' house in Minnesota on a single battery change."

A patent application for the material has been filed with Kansas State University Research Foundation. The foundation is a nonprofit corporation responsible for managing technology transfer activities at the university.

Klankowski was one of five doctoral students at Kansas State University to recently earn a scholarship from the research foundation to help him further develop his research.

New Zealand set 175-run target for Sri Lanka ? Cricket News Roundup ? Part II ? September 27, 2012

Rob Nicol scored a quick half century to help New Zealand set a competitive target of 175 to win for hosts Sri Lanka, in the first Super Eight match, being played at Pallekele today, September 27, 2012.

After opting to bat first, the Black Caps rode on opener Rob Nicol?s 40-ball 58 to put a competitive 174 for 7 on board, in the opening Super Eight fixture of the latest edition of the ICC World T20 championship, underway in Sri Lanka since September 18, 2012. Nicol?s quick 58 was laced with three boundaries and four towering sixes. Martin Guptill (38), Brendon McCullum (25) and skipper Ross Taylor (23) were the other notable performers.

In reply, the home side was quite comfortable at 160 for 3 at the end of 18th overs. Tillakaratne Dilshan (unbeaten on 75) and Mahela Jayawardene provided the side with an impressive launch pad of 80 runs from 7.2 overs.

New Zealand (Playing XI):?1 Martin Guptill, 2 Rob Nicol, 3 Brendon McCullum (wk), 4 Kane Williamson, 5 Ross Taylor (capt), 6 Jacob Oram, 7 James Franklin, 8 Daniel Vettori, 9 Nathan McCullum, 10 Tim Southee, 11 Kyle Mills.

Sri Lanka (Playing XI):?1 Tillakaratne Dilshan, 2 Mahela Jayawardene (capt), 3 Kumar Sangakkara (wk), 4 Dinesh Chandimal, 5 Jeevan Mendis, 6 Angelo Mathews, 7 Thisara Perera, 8 Nuwan Kulasekara, 9 Lasith Malinga, 10 Ajantha Mendis, 11 Akila Dananjaya.

Indian skipper Mahendra Singh Dhoni revealed on Thursday that they might go into Friday?s Super Eight match against Australia with five bowlers.

Playing five bowlers would mean dropping either swashbuckling opener Virender Sehwag or veteran all-rounder Yuvraj Singh, and Dhoni admitted it would the toughest decision of his career.

"We would most likely go in with five bowlers but I still don't know what will be the combination,? Dhoni said during a pre-match media interaction in Colombo on Thursday. "It is one of the toughest decisions I have taken so far. We will have to see what fits the combinations. Just wait and watch. Ultimately the decision we take has to be a good one that benefits the team," he added further.

George Bailey on Thursday agreed that Shane Watson was a dependable player, however he rubbished the perspective that his team was overly dependent on the veteran all-rounder.

"Shane is a dependable player but we are not dependent on him,? insisted the Australian skipper. ?It might look like that since he has been very consistent. But there will be days when he would not get runs and others will have to step up," Bailey added.

A Few Ways To Win At Weight Loss | meizitang botanicalslimming

It?s hard to lose weight when you don?t know how. It is even more frustrating when it feels as though you?ve already tried everything. This article will allow you to see what rules you should follow to shed some pounds.

It is natural for your weight to fluctuate on a daily basis. You should pay attention to the long-term trend your weight is taking, not the day-by-day numbers on the scale. Your progress is probably fine as long as the overall motion is downwards.

Don?t skip meals if you want to lose weight. Many are disillusioned with the thought of skipping meals making them thinner; however, it is going to cause your body to store fat instead of burning it. You should try to eat a small amount of food if you aren?t really hungry at least 3 times a day.

By reducing your alcohol consumption, you can lose more weight. Though it?s ok in moderation, too much alcohol will pack on the pounds. Most alcoholic beverages are nothing but empty calories. If you?re going to drink, try a low calorie version of the original.

Doing your cardiovascular exercise when you first wake up in the morning and before you eat is a great way to help yourself lose weight. It has been shown that you will burn 3 times more calories if do cardio then.

A lack of motivation is the number one obstacle to a successful weight loss plan. Your excitement is high in the first weeks of a gym membership, but the excitement can quickly fade. It?s important to constantly remind yourself of your goals and do things to keep yourself motivated.

There are some really good reasons why you need plenty of protein in your daily diet. Protein will not cause fat gain in the way that carbohydrates and fats do, and it will help you build muscle. Having a larger muscle mass causes you to burn fat faster.

Avoid eating before bed and never eat carbs at night. This will also help to nourish your body overnight.

Even when dieting, you need to eat a sufficient amount of food. Many people focus on low calorie items and do not get enough of what they need from their food. You might shed some pounds, but your health will suffer.

To lose weight, you need to add whole grains into your diet. To find out the best way to go about this, you can either do your own research or get advice from a dietician. If a product?s food label contains the word ?refined? or ?enriched,? then give it a miss. Many companies advertise their use of whole grains but once you know how to recognize them, shopping for whole grain products is simple.

Get yourself some chili sauce. Chili peppers are a great aid for boosting metabolism. It also a great source for energy and fantastic for aiding in burning calories. There are many uses for chili pepper sauce, such as on proteins like chicken and eggs. This is a great way to add new flavors to your diet.

Reduce the amount of red meat that you eat during the course of the day to lower cholesterol and saturated fat intake. One way to enjoy red meat includes incorporating it into a vegetable rich meal, such as a borscht or beef stew. Incorporating small bits of meat into your favorite soups and casserole dishes can be very effective as well.

Unused calories will not just instantly disappear from your body, they are stored as fat. So, if you know you won?t be very active today, eat lightly. You won?t require many calories on days in which you are sedentary. Just eat when you?re aware that you?ll be active. By doing this, you ensure that you actually use the calories that you eat.

Just follow the guidelines and you will definitely reach your goals when it comes to weight loss. Just remember to take things slowly and be prepared for little slip-ups along the way. Expect to give into cravings now and then and know that you will miss workouts sometimes. Start out fresh again the next day.

EU Court Asked To Rule On Legality Of Downloading From Illegal Sources

As part of a case between several computer media companies and the organization responsible for copying levies, the Dutch Supreme Court is set to seek the advice of the European Court of Justice concerning the right to make private copies. Currently it is considered acceptable for Dutch citizens to download copyrighted material for personal use, even if that content comes from an illicit source such as file-sharing networks. A ruling in the wrong direction could change all of that.

Last week the Dutch Supreme Court decided to refer some interesting questions to the European Court of Justice. The responses it receives back could have some serious implications for the tolerant environment currently enjoyed by file-sharers in the Netherlands.

The case involves argument over the country?s private copy levy, which sees Dutch citizens granted the right to carry out personal use copying in return for rightsholders picking up revenue from levies on blank media.

These levies are set through negotiation between a foundation representing authors and composers on one side, and producers of blank media on the other. In the most recent round the argument was raised that the current levy should also extend to cover downloads made from illegal sources, i.e from online file-sharing networks.

As confusing as it might sound, downloading from illegal sources is considered legal in the Netherlands. That notion was underlined in December 2011 when the Dutch parliament adopted a motion to keep downloading movies and music for personal use legal, and considering a situation where current copyright levies could be extended to downloading-related hardware such as hard drives.

?The Court of Appeals held that downloading from an illegal source is itself legal, mainly because the Secretary of Justice had repeatedly said so in Parliament and the language of the private copying article (from the Copyright Act) did not require a legal source explicitly,? Arnoud Engelfriet, a lawyer specializing in Internet law at the ICTRecht law firm, told TorrentFreak this morning.

However, the Supreme Court now makes the observation that the EU Copyright Directive may consider that copying from an illegal source is self-evidently illegal, so it has referred the matter to the European Court of Justice.

The Supreme Court has asked the ECJ several questions including whether private copying can only be legal if carried out from a legal source.

?[If we] suppose that?s the correct reading, can the Dutch then go further than the Directive and also legalize home copying from an illegal source? Or is *only* the Directive the source of legal acts within copyright law?? Engelfriet explains.

A report commissioned by the Dutch government in 2009 found that file-sharing has an overall positive effect on the Dutch economy, which is just as well since an estimated 30% of the population are believed to engage in the activity.

The decision of the ECJ will determine the continued legality ? or otherwise ? of downloading for personal use in the Netherlands, with the potential to affect millions.

(AP) ? Egypt's new President Mohammed Morsi assigned himself the heavyweight's role in the Middle East on Wednesday, declaring in his first speech to the United Nations that the civil war raging in Syria is the "tragedy of the age" and must be brought to an end.

In a wide-ranging address that touched on all major issues confronting the region, Morsi also decried Israeli settlement-building on territory Palestinians claim for a future state and condemned a film produced in the United States that denigrates Islam's Prophet Muhammad.

He urged all U.N. member nations to join in an effort to end what he called "the catastrophe in Syria" that pits the regime of Bashar Assad against opposition forces trying to end 40 years of dictatorship. More than 30,000 people have been killed in the 18-month conflict.

Morsi has called for Assad to step down and said Wednesday that "the bloodshed in Syria and the humanitarian crisis that has unfolded must be stopped."

Morsi, an Islamist and key member of the once-banned Muslim Brotherhood, opened his remarks to the U.N. General Assembly by celebrating himself as Egypt's first democratically elected leader who was swept into office after what he called a "great, peaceful revolution" that overthrew Hosni Mubarak.

He then quickly inserted himself into the thorniest issues in the Middle East, demanding that the United Nations grant membership to the Palestinians, with or without a peace agreement with Israel.

"The fruits of dignity and freedom must not remain far from the Palestinian people," he said, adding that it was "shameful" that U.N. resolutions are not enforced.

The Palestinians are expected to again ask for U.N. recognition and formally make application to the world body in November, after the U.S. presidential election. President Barack Obama said when the Palestinians sought recognition last year that Washington would block the move until there was a peace deal with Israel. The focus of Israeli-Palestinian negotiations, which have been on hold for four years, is a two-state solution that would formally grant the Palestinians the rights of an independent country.

In his bid to end the violence in Syria, Morsi has invited Turkey, Iran and Saudi Arabia to join a contact group, though the Saudis have not yet participated and the fighting in Syria continues unabated. While Morsi wants Assad to step aside, he said Wednesday that he opposes any foreign military intervention.

The U.N. Security Council, which could call for intervention or global sanctions against Syria, is deadlocked because Russia, Assad's main protector, and China have blocked a series of resolutions brought by Western governments.

Morsi also denounced as an obscenity the anti-Islam video that portrays the Prophet Muhammad as a womanizer, a child molester and a fraud, insisting that freedom of expression does not allow for attacks on any religion.

He also condemned the violence that swept Muslim countries last week in reaction to the video. At least 51 people were killed, including the U.S. ambassador to Libya and three other Americans targeted in an attack on the U.S. Consulate in Benghazi.

"Egypt respects freedom of expression. One that is not used to incite hatred against anyone. One that is not directed toward one specific religion or culture. A freedom of expression that tackles extremism and violence. Not the freedom of expression that deepens ignorance and disregards others," Morsi said.

He appeared to have been responding to Obama's General Assembly speech Tuesday in which the U.S. leader again condemned the video but sternly defended the U.S. Constitution's free speech guarantees.

In Cairo, Egyptians watched Morsi's speech closely for signs of how he would conduct his presidency. Sahar Abdel-Mohsen, a 31-year architect, praised Morsi's condemnation of the Assad regime, but questioned his assertions about free speech.

"How can he talk about freedom of expression when there are many protesters in detention in Egypt, including minors, and when people are locked up for the so-called contempt of religion?" she said.

The head of the Arab League, meanwhile, called for the international community to criminalize blasphemy, warning that insults to religion pose a serious threat to global peace and security.

Nabil Elaraby's comments to a special session of the U.N. Security Council put him at direct odds with the United States and its Western allies, which are resolutely opposed to restrictions on freedom of expression. However, Elaraby said that if the West has criminalized acts that result in bodily harm, it must also criminalize acts that cause "psychological and spiritual harm."

Earlier Wednesday, Iranian leader Mahmoud Ahmadinejad, known for past fiery denunciations of the United States and Israel, spoke at length about his vision for a new world order without the "hegemony of arrogance."

Of Israel, he cited what he termed the "continued threat by the uncivilized Zionists to resort to military action against our great nation."

The U.S. delegation boycotted Ahmadinejad's speech in response to the "paranoid theories and repulsive slurs against Israel" included in a separate address delivered by the Iranian president on Monday.

"It's particularly unfortunate that Mr. Ahmadinejad will have the platform of the U.N. General Assembly on Yom Kippur, which is why the United States has decided not to attend," Erin Pelton, spokeswoman for the U.S. Mission to the U.N., said in a statement.

Thousands of protesters in yellow vests emblazoned with photos of Iranian dissidents they said were killed by the Iranian regime gathered outside U.N. headquarters during the Iranian leader's speech. Speakers included former House Speaker Newt Gingrich, Rep. Carolyn Maloney, D-NY, and former Rep. Patrick Kennedy, D-R.I.

Deputy Foreign Ministry spokesman Ramin Mehmanparast was threatened by members of the protest crowd as he walked near the United Nations. He was confronted by the angry mob, said New York police spokesman Paul Browne. The diplomat flagged down police officers, who helped him get to a safe spot. Browne said the threats were believed to have been verbal.

In his speech on Wednesday, Ahmadinejad did not refer to Iran's nuclear program. Israel and Western nations contend that Tehran is using what it insists is a peaceful nuclear program as a cover for developing the ability to build atomic weapons.

Tough sanctions have been imposed on Iran as punishment for its failure to cooperate with the U.N. nuclear watchdog agency to prove the peaceful nature of its drive to enrich uranium to levels that could be used to build a nuclear weapon.

Israel has threatened a military strike against Iranian nuclear installations, but Obama insists there is still time to solve the dispute through diplomacy. He has vowed, however, to stop Tehran from obtaining a nuclear arsenal.

Outside the U.N., Alex Mohammed, 40, a restaurant manager from Chicago, stood next to a mock jail cell with a noose next to it, and a cartoon of Ahmadinejad standing under a series of hanged Iranians' legs and the inscription: "We don't have political prisoners in Iran ? anymore."

"It's getting worse in Iran, because the dictator is taking away more freedoms, including freedom of speech, and jailing journalists," said Mohammed, who has family in Tehran.

How to cook perfect pilaf | Life and style | The Guardian

Pilaf is an old, old dish, the complexities of which belie the brief definition given in the Oxford Companion to Food: "a Middle Eastern method of cooking rice so that every grain remains separate, and the name of the resulting dish". That separation is the important thing: 13th-century Arabic texts suggest the plump grains should resemble peppercorns ? no mush, no stickiness.

This is usually achieved by successively boiling and gently steaming to pilaf perfection, but, as with many such apparently simple dishes, that's not the end of it. Washing or soaking the rice to rid it of any surface starch, which might make it sticky, is common, as is covering it with a cloth, as well as a lid, to protect it from drops of condensation as it steams. Then there's the issue of the tah-dig, literally the "bottom of the pot", a golden crust often fought over at in Middle Eastern households, and often enhanced with egg or pieces of flatbread.

Although thousands of variations on pilaf exist, from Turkey to Turkmenistan, taking in the plovs of central Asia and the pilaus of the Indian subcontinent, adding meat, fruit and vegetables, even substituting the rice for bulghur wheat, I've restricted myself to the simplest version. Lightly spiced, fluffy rice, with a crunchy toasted bottom. How hard can it be?

The rice: a grain of truth

Angela Hartnett recipe pilaf with brown rice Angela Hartnett recipe pilaf with brown rice. Photograph: Felicity Cloake

Having ruled out the bulghur wheat variation, I don't find much debate here: basmati seems to be the rule (although I do hear that, in Central Asia short-grain is favoured, I don't find any recipes using it. Claudia Roden says in Arabesque that, although ordinary long-grain can be used, basmati is her preferred choice thanks to its superior taste and the fact that the grains stay "light, fluffy and separate" and I see no reason to doubt her. Basmati is the undisputed king of long-grain rice, and pilaf deserves the best.

I do give a brown rice pilaf a try though ? Angela Hartnett's recipe, which uses unpolished basmati. It needs far longer to cook, as is usual for brown rice, but not quite as long, perhaps, as the recipe suggests ? I'm all for tah-dig, but the smell of singeing rice alerts me to the fact this has gone too far long before the 40 minutes are up. The rice that I can rescue is nice enough, but the chewiness of brown rice seems at odds with the elegance of the dish itself. Plus it takes me bloody ages to wash up. On that basis, I'm sticking with white.

Rinsing it before use to wash off the starch is common in much rice cookery, although of the recipes I try, only Roden, Gordon Ramsay, Anissa Helou in Saveur magazine and Sally Butcher in Veggiestan recommend it. Indeed, Helou both rinses and soaks for two hours before use, but, although this reduces the cooking time slightly, it doesn't seem to make much difference to the texture.

The liquid

Tamasin Day-Lewis recipe pilaf Tamasin Day-Lewis recipe pilaf. Photograph: Felicity Cloake

The plainest pilafs, unenlivened by chunks of lamb tail fat or mutton, are cooked with either just water (Elizabeth David's A Book of Mediterranean Food, Butcher, Helou), or stock. Roden gives the option of either water or chicken stock in Arabesque, as does Ramsay in his recipe for Good Food magazine, Tamasin Day-Lewis water or vegetable stock in All You Can Eat, and Hartnett chicken or vegetable stock in her recipe for the Guardian.

I'm not convinced by the vegetable stock ? it's too herbaceous, which I don't think works well with the spices (more elaborate pilaf recipes will suggest a generous garnish of fresh dill or parsley). Chicken adds a savoury richness, but in the end, I decide to let the butter and the rice speak for themselves: you could substitute stock if you wanted to serve the pilaf on its own, but I think water does just fine.

Aromatics and spices

Gordon Ramsay recipe pilaf Gordon Ramsay recipe pilaf. Photograph: Felicity Cloake

Here I mean only whatever flavourings the rice is cooked with. Fried onion is common, and used by Day-Lewis and Ramsay, who are also quite similar in their use of cardamom, cinnamon and bay leaves (the latter adds cloves and lemon zest for good measure). Helou goes for saffron. I love the way the cardamom and cinnamon perfume the rice, and the fragrant zest is inspired ? I notice she adds crystallised and raw orange peel to her finished Iranian shirin polow, and this seems like a more subtle variation. The saffron gives the rice a pleasingly warm colour: it's not a must for a pilaf, but on a special occasion, it seems worth pushing the boat out for. I'll be ditching the onions though: their melting texture is at odds with the perfect fluffiness of the rice.

Fat

Sally Butcher recipe pilaf Sally Butcher recipe pilaf. Photograph: Felicity Cloake

Many pilaf recipes start in much the same way as a risotto: rice is stirred into hot fat, and left to absorb a little before the liquid element is added. Butter or ghee are popular, used by Ramsay, Day-Lewis and Roden (although she adds the butter to the boiling liquid instead), while Butcher suggests ghee or oil, Helou canola oil, Hartnett olive oil and David dripping or oil. I don't like the stolid flavour of the dripping with my lovely fragrant fluffy rice, and the oil seems to be just a lubricant. Butter or ghee give a far richer result ? I'm going for butter, because I think it tastes better.

Method

Elizabeth David recipe pilaf Elizabeth David recipe pilaf. Photograph: Felicity Cloake

Which is where things get really interesting. The simplest method I find is David's suliman's pilaf, subtitled "one of the most comforting dishes imaginable", where the rice is fried briefly in dripping then topped up with lots of boiling water and cooked for 12 minutes. No lid means no steaming, and although it's quick, the drained rice is damp when it goes back into a pan with toppings including pine nuts, tomatoes, garlic, onion, chopped mutton, currants and sultanas, all sauteed in dripping "with plenty of seasoning". As I mix, it turns into a rather sticky mush.

The other slightly strange recipe comes from Ramsay who, after coating his rice in butter and covering it with boiling water, bakes it at 180C for 25 minutes. Admittedly, it's tasty enough, but there's no bottom crust, and the results are at the less fluffy end of things.

Butcher cooks the soaked rice in boiling water for 7 minutes until al dente, then drains and returns to a pan coated in sizzling ghee, along with 2 tbsp water. This can then be covered and left for 35 minutes. Helou adopts a slightly similar, but more complex method, boiling it for 12 minutes, draining, and then returning the pan to the heat with saffron, milk and oil, and steaming the rice for 15 minutes. She then adds melted butter and a cup of boiling water, covers again, and cooks for a further half hour. Both poke holes in the rice before covering, to help steam to escape.

Claudia Roden recipe pilaf Claudia Roden recipe pilaf. Photograph: Felicity Cloake

Roden, meanwhile, adds the butter and rice to boiling water, covers, and cooks undisturbed for 18?20 minutes. Day-Lewis toasts the rice in butter first, then follows essentially the same method. Both are far simpler and quicker than the par-boiled versions, but lack the crunchy base and fluffy rice of Butcher's and Helou's pilafs. Of the two, I prefer the less buttery, simpler, drier style of Butcher's dish. Handily, it's also easier. Wrapping the lid in a tea towel, as she suggests, does indeed help prevent drips too.

Tah-dig ta-da

Achieving that all-important tah-dig without resorting to adding extra ingredients is a delicate process. Butcher suggests immersing the bottom of the pan in cold water to dislodge it in one gorgeous golden piece. (She also gives various other things you can add, from yoghurt to potatoes, but I suspect this is beyond my remit.) This works perfectly: if only I'd known about it when making the brown rice version ...

Perfect pilaf

Felicity's perfect pilaf Felicity's perfect pilaf. Photograph: Felicity Cloake

Serves 4

300g white basmati rice
Salt
Generous knob of butter
3 cardamom pods, crushed
1 stick of cinnamon
2 strips of lemon zest
Pinch of saffron (optional)

1. Rinse the rice thoroughly and tip into a large saucepan of boiling, salted water. Stir, bring back to the boil, and cook for 7 minutes.

2. Drain well and season to taste. Meanwhile, melt the butter in a clean pan over a medium heat then add the spices and lemon zest. Cook for a minute, then add 2 tbsp water and a layer of rice. Heap the rest on top in layers, making sure not to push it down. Make 5 air holes in the surface with the handle of a wooden spoon, wrap a lid of the pan in a clean tea towel and cover. Cook over a very low heat for 30 minutes.

3. Have 5cm of cold water ready in the sink. When the rice is done, plunge the pan into the water and leave for a minute, then turn the pilaf on to a platter.

Is pilaf rice's finest hour or do you prefer it fried, baked or boiled with milk and plenty of sugar? Which country does the best version: do you prefer palau, pilau or plov?

Viruses help scientists battle pathogenic bacteria and improve water supply

Tuesday, September 25, 2012

Infectious bacteria received a taste of their own medicine from University of Missouri researchers who used viruses to infect and kill colonies of Pseudomonas aeruginosa, common disease-causing bacteria. The viruses, known as bacteriophages, could be used to efficiently sanitize water treatment facilities and may aid in the fight against deadly antibiotic-resistant bacteria.

"Our experiment was the first to use bacteriophages in conjunction with chlorine to destroy biofilms, which are layers of bacteria growing on a solid surface," said Zhiqiang Hu, associate professor of civil and environmental engineering in MU's College of Engineering. "The advantage to using viruses is that they can selectively kill harmful bacteria. Beneficial bacteria, such as those used to break down wastes in water treatment plants, are largely unaffected. Hence, viruses could be used to get rid of pathogenic bacteria in water filters that would otherwise have to be replaced. They could save taxpayers' money by reducing the cost of cleaning water."

Bacteria can be difficult to kill when they form a biofilm. The outer crust of bacteria in these biofilms can be killed by chlorine, but the inner bacteria are sheltered. Viruses solve this problem because they spread through an entire colony of bacteria. Hu noted that the bacteriophages are easier to create than the enzymes used to attack biofilms. The viruses also are better at targeting specific bacterial species.

Hu, along with MU's recent graduate, Yanyan Zhang, found the greatest success in killing biofilms by using a combination of bacteriophages and chlorine. An initial treatment with viruses followed by chlorine knocked out 97 percent of biofilms within five days of exposure. When used alone, viruses removed 89 percent of biofilms, while chlorine removed only 40 percent.

"The methods we used to kill Pseudomonas aeruginosa could be used against other dangerous bacteria, even those that have developed resistance to antibiotics," said Hu. "Our work opened the door to a new strategy for combating the dangers and costs of bacterial biofilms. The next step is to expand our experiment into a pilot study."

The study "Combined Treatment of Pseudomonas aeruginosa Biofilms with Bacteriophages and Chlorine" has been published in the journal Biotechnology and Bioengineering.

Ryan: Want Obama to be re-elected? Then don?t vote for Ron Paul

Paul Ryan (Scott Wong/Getty Images)

Republican vice presidential nominee Paul Ryan made a pitch to Ron Paul supporters during a? rally in Lima, Ohio, on Monday when asked why libertarians should support the Romney-Ryan ticket.

"For those of us who would have voted in the primaries for, say, Ron Paul, why should we vote for you and not, say, libertarians or Vermin Supreme and the Pony Party or something like that?" a man from the audience asked during the question and answer session.

"Do you want Barack Obama to be re-elected?" Ryan asked. "Then don't vote for Ron Paul."

He quickly added, however, that he agrees with Paul on issues concerning the Federal Reserve and government involvement in the economy:

There are many things that Ron has championed that I am a believer in. Especially liberty and sound money. Look at where we are. And this is where we all see eye to eye. We believe in limited government and economic freedom. We believe in pro-growth policies that say, You keep your money in your family's budget, in your family's business instead of sending it to Washington in the first place. That creates prosperity, freedom and jobs.

And on an issue where Ron has been particularly explicit, the Federal Reserve is yet again trying to bail out the fact that Obama, President Obama has failed on fiscal policy. All of this money printing, which is coming from the Federal Reserve, risks debasing our currency. It risks undermining the value of our dollar, it risks increasing prices on things like food and gas. And among the things that the government can do to harm its people, one of the worst things is to debase its currency. We need sound money, we need our money to have a reliable store of value, especially for people living on fixed incomes. That's an area we feel very strong about.

For those wondering who "Vermin Supreme" is,?he's a candidate for president who ran primarily in New Hampshire. He travels the country wearing a boot over his head and promising free ponies for all Americans. You can learn more about him from this exclusive interview with Yahoo News in January:

(AP) ? Mitt Romney led a chorus of Republican criticism of the administration's foreign policy on Monday, accusing President Barack Obama of minimizing the recent killing of the U.S. ambassador to Libya as a mere "bump in the road" rather than part of a chain of events that threatens American interests.

White House press secretary Jay Carney called the accusations "desperate and offensive," an attempt by Romney and his allies to gain political advantage in the latter stages of a political campaign that seems to be trending Obama's way.

The president did not comment on the criticism when he and first lady Michele Obama taped an appearance on ABC's "The View" that blended the personal with the political. Asked if a Romney presidency would be a disaster, Obama said the nation can "survive a lot." He added: "The American people don't want to just survive, we want to thrive."

The back and forth on foreign policy occurred as Romney said he was shifting to a more energetic schedule of public campaign events, bidding to reverse recent erosion in battleground state polls. After days spent largely raising campaign cash ? and trying to minimize the fallout from one speech to donors last spring ? he pledged to make the case for "real and positive change."

While national polls make the race exceedingly close, Obama has gained ground on Romney in many recent surveys when potential voters are asked to compare the two rivals in their ability to fix the economy. Sluggish growth and national unemployment of 8.1 percent make the economy by far the dominant issue in the race, and the two men have focused much of their time and advertising budgets on highlighting their differences on taxes, spending and plans for job creation.

The same polls show Obama with a healthy lead over Romney when voters are asked which candidate is better equipped to handle foreign policy, and the president has not shied away from trumpeting his decision to order the secret mission by U.S. forces that killed terrorism mastermind Osama bin Laden in his Pakistani hideout more than a year ago.

At the same time, Romney's advisers say voters are more inclined to question Obama's handling of foreign policy after the attack on the U.S. consulate in Benghazi, Libya, earlier this month resulted in the death of the U.S. ambassador and three other Americans.

Not only Romney, but other Republicans, as well, challenged Obama on foreign policy on Monday.

In a conference call with reporters, Rep. Eric Cantor, R-Va., the House majority leader, said, "Israel continues to find itself on the receiving end of harsh language by the president of the White House. ... There is a somewhat continued pattern of throwing Israel under the bus when Israel stands as our closest ally."

And the National Republican Senatorial Committee issued challenges to Democratic candidates in several races to "share their view" on Obama's remarks in an interview with CBS' "60 Minutes" over the weekend.

In the interview, Obama was responding when asked if recent events in the Middle East gave him pause for supporting governments that came to power following a wave of regime changes known as the Arab Spring.

He said he has long noted that events were going to be rocky, adding that the question itself "presumes that somehow we could have stopped this wave of change."

"I think it was absolutely the right thing for us to align ourselves with democracy, universal rights. ... But I was pretty certain and continue to be pretty certain that there are going to be bumps in the road because ? you know, in a lot of these places ? the one organizing principle has been Islam. ...

"There are strains of extremism, and anti-Americans, and anti-Western sentiments and you know can be tapped into by demagogues," he added.

Romney was eager to talk about the topic, squeezing interviews with three television networks into his schedule and touching on the subject at the beginning of a rally in Pueblo, Colo.

"I can't imagine saying something like the assassination of ambassadors is a bump in the road, when you look at the entire context, the assassination, the Muslim Brotherhood president being elected in Egypt, 20,000 people killed in Syria, Iran close to becoming a nuclear nation, that these are far from being bumps in the road," he told ABC.

"They represent events that are spinning out of the kind of influence we'd like to have. We're at the mercy of events rather than shaping the events in the Middle East."

U.S. officials are investigating the deaths in Libya, which occurred when the consulate was breached.

In his appearance on "The View," the president avoided a direct answer when asked if the attack had been terrorism.

"There's no doubt that the kind of weapons that were used, the ongoing assault, that it wasn't just a mob action. What's clear is that, around the world, there are still a lot of threats out there," he said.

Romney intends to return to the subject of international affairs and discuss foreign aid, trade agreements and international development when he addresses the Clinton Global Initiative in New York on Tuesday, according to a person familiar with the campaign's thinking.

Romney, like Cantor, took a slap Monday at Obama's handling of relations with Israel.

"The president doesn't have time to actually spend time with leaders of these nations, particularly Bibi Netanyahu, I find that very troubling," he said.

In a campaign setting records for television advertising, both campaigns released new commercials during the day. And Obama conceded some of his own had gone too far.

"You know, do we see sometimes us going overboard in our campaign, the mistakes that are made in areas where there is no doubt that somebody could dispute how we are presenting things ? that happens in politics," he said during the "60 Minutes" taping. The remark was not part of the broadcast but was posted to the CBS website.

Tesla unveils faster electric car charging station

(AP) ? Tesla Motors Inc. unveiled a solar-powered charging station on Monday that it said will make refueling electric vehicles on long trips about as fast as stopping for gas and a bathroom break in a conventional car.

CEO Elon Musk said at a news conference at the company's design studio that the company's roadside Supercharger has been installed at six highway rest stops in California.

The innovation is "the answer to the three major problems that are holding back electrical vehicles, or at least people think are holding back electrical vehicles," Musk said before a curtain was lifted from a giant model of one of the devices. "One is this question of being able to drive long distances conveniently."

The free stations are designed to fully charge Tesla's new Model S sedan in about an hour, and a half-hour-long charge can produce enough energy for a 150-mile trip, he said.

The first six, which were developed and deployed in secret, are in Barstow, Hawthorne, Lebec, Coalinga, Gilroy and Folsom. Tesla spokeswoman Christina Ra said they are open only to company employees, but would be available to the public in early October.

Musk said his Palo Alto-based company planned to have more stations running throughout California and in parts of Nevada and Oregon by the end of the year, and expected to blanket "almost the entire United States" within two years.

Tesla unveiled the Model S, its first mass-market vehicle, in June. The base model costs sells for $49,900 after a federal tax credit.

Along with persuading consumers that electric vehicles are practical, the charging stations were developed with an eye toward alleviating doubts about their environmental effects. Musk said the solar-powered stations in California would produce more clean energy than is needed to keep cars running.

Waitrose to Launch Web TV Channels Aimed at Food Lovers

Food porn for the masses via Waitrose is set to arrive on a tablet, laptop or computer near you this Autumn as the retailer is working together with Red Bee Media to create Waitrose TV.

The plan is to provide content to inspire home cooks with 6 different channels of content. The Highlights channel will have new videos each week, and other channels will be dedicated to food, health, drink, ethical sourcing and seasonal events like Chirstmas.

Content will range from recipes, how-to guides and interviews. We?d expect it also acts as a fair promotional source for the Waitrose brand too, but if you?ve ever bought a supermarket magazine for the recipes, you?ll know that?s par for the course.

The project does have some top names from the culinary world to attract viewers. Expect to see Delia, Heston Blumenthal, Dhruv Baker, The Fabulous Baker Brothers, Silvana Franco and Sam Stern in the mix.

In a ?feat of connectivity, there will be a ?Buy ingredients? button on screen that will offer viewers a way to click through and make purchases for specific recipes or related products. no doubt this will help promote products and owning the channel means not having to wait for that lucrative TV sponsorship deal.

Whether you shop at Waitrose or not, having a how-to recipe video on a tablet in a kitchen, will be easier than trying to keep up with traditionally broadcast TV. The ability to stop, pause and rewind instructions while reading a text version seems a nice way to learn new things, providing you can keep eggs, flour and milk away from your nice clean touch screen.

The content will also be shareable via Facebook and Twitter, not a bad idea as many of us like to discuss the food we?re about to try, the meals that went well and of course the kitchen disasters where it?s fun to share the pain.

Controlled content

Waitrose has 284 shops around the UK and Channel Islands and is often seen as a pretty fancy place to shop. More recently a social media campaign went a little wrong for the brand when it was hijacked on Twitter.

The online campaign asked customers to finish the line, ?I shop at Waitrose because?? plus the hashtag #WaitroseReasons and a deluge of sarcasm and hijinks ensued. This proves that once you release something like this on the Web, you no longer own it.

Realising the campaign was out of control, the company responded with good grace and received the jokes with good grace.

Let?s hope Clarissa?s pony likes Web TV?.
